Nova ementa

Bom domingo para todos! Aqui fica a nova ementa para a semana que aí vem!
Mas o prometido é devido, por isso aqui fica a minha receita de Scones. Acho que é a primeira vez que a partilho com alguém! Já não me lembro onde a vi pela primeira vez mas sei que a faço desde criança. Sempre a soube de cor e ao longo dos anos fui fazendo alguns ajustes e alterações. Acho que está no ponto ideal agora por isso espero que gostem!

Uma das receitas desta semana é Galinha marrocos com tomate, mel e açafrão. Tem um sabor um pouco adocicado mas não deixa por isso de ser uma delícia. Esta foi uma das muitas receitas que traduzi enquanto estive de repouso da amniocentese que fiz na gravidez da minha filha. São todas excelentes e pratos que faço muito cá em casa!

Bolachas de Alfazema

Este fim-de-semana decidi experimentar mais uma receita do livro Dias com Mafalda. Desta vez foram as Bolachas de Alfazema. Como o calor era muito, servi-as ao lanche acompanhadas de uma fresca limonada. Recomendo esta receita vivamente! As bolachas são muito fáceis de fazer e são uma autêntica delícia! Desapareceram num ápice!

This weekend I decide to try another recipe from the book Dias Com Mafalda. This time I tried the Lavender Cookies. It was really hot, so I served them at tea time with a fresh homemade lemonade. I really recomend this recipe! The cookies are really easy to do and they are very good! They were gone in a split second!

Receitas

É espantoso como, quando a nossa cabeça não tem se ocupar com as mil e uma preocupações típicas de um dia a dia de trabalho, arranjamos tempo e vontade para experimentar e fazer coisas novas. Para mim a grande (re)descoberta tem sido a cozinha e o experimentar de receitas novas, o que há muito não acontecia! Assim dei por mim a experimentar duas receitas novas este fim-de-semana.

It's amazing how, when our head is not occupied with a million tiny worries and details typical of a working day, we find time and will to try and experiment different things. For me the new (re)discovery has been cooking and experimenting new recipes, which didn't happen for a long, long time. So I found myself this weekend trying two new recipes!
Assim resolvi experimentar uma receita do livro Dias com Mafalda, da Mafalda Pinto Leite. A receita chama-se Quadrados de Limão e foi uma muita agradável surpresa.

So I decided to try a recipe from the book Dias com Mafalda, from Mafalda Pinto Leite. The recipe is called Lemon Squares and it was a very good surprise!
A receita é feita em dois passos mas que são ambos muito simples.

The recipe is made in two different but very simple steps.
Depois de cozido o bolo e pronto a ser cortado em quadrados e polvilhado com açúcar em pó.

After being baked and ready to be cut into squares and dusted with icing sugar.
Os quadrados são simplesmente deliciosos e esta receita entrou definitivamente para a minha lista de preferidas! Para além desta receita ainda experimentei uma outra da mesma autora mas de um outro livro (Cozinha para quem quer poupar). A receita de Frango com legumes assados e pesto foi também um sucesso! No próximo fim-de-semana há mais!

The lemon squares are simply delicious and this recipe has entered my list of favourites! Besides this one, I also tried another recipe from the same author but from another book (Cozinha para quem quer poupar). The chicken with baked vegetables and pesto was also a suceess! Next weekend I will try some more!

Bolo de Chocolate da Titi

Lembro-me bem do dia em que fizemos esta receita de bolo pela primeira vez. Fazia parte de um livro de receitas do Obélix (sim o famoso Gaulês) e foi unânime a aprovação. Cá em casa é conhecido como o bolo de chocolate da Titi, por ser o bolo preferido da minha irmã. Faço esta receita vezes sem conta, em diversos formatos e tamanhos. Nunca me deixou ficar mal. O segredo? Bem boa manteiga (a minha preferida é a Nova Açores) e chocolate para culinária Pantagruel, o da embalagem bege. Se quiserem experimentar, aqui fica a receita!

I remember clearly the day we made this cake recipe for the first time. It was in a cooking book for children from Obélix, the famous "Gaulois" and for everyone it was love at first site. Here at home we call it Titi's Chocolate Cake because it is my youngest sister favorite cake. I do this recipe time and time again in several shapes and sizes and it has never let me down. The secret? Well good butter and good chocolate. If you want to try it, here is the recipe!

Ingredientes/Ingredients
- 200 g de açúcar/200 g of sugar
- 200 g de manteiga/200 g of butter
- 200 g de chocolate para culinária/200 g of dark chocolate
- 5 ovos/5 eggs
- 140 g de farinha sem fermento/140 g of flour

Coloque a derreter em banho-maria o chocolate e a manteiga e pré-aqueça o forno a 180ºC. Entretanto separa para duas tigelas as claras e as gemas dos ovos. Adicione às gemas o açúcar, batendo bem. Depois junte o chocolate derretido com a manteiga e bata bem novamente. Adicione então a farinha envolvendo-a no preparado. Por fim junte as claras batidas em castelo bem firme. Deite numa forma untada com manteiga e leve ao forno cerca de 25 a 30 minutos. Saboreie!

Melt the butter and the chocolate in a bain-marie. Pre-heat the oven at 180ºC. In the meantime separate the egg whites and the yolks to two different bowls. Add the sugar to the yolks and beat well. Add the melted sugar and butter and beat again. Then add the flour involving it carefully. Finally join the egg whites, previously beaten into soft peaks. Pour this mixture into a a greased baking pan, previously greased with butter and bake in the oven for 25 to 30 minutes. Enjoy!

Promessa a uma amiga...

Há algum tempo atrás prometi a uma amiga dar-lhe a receita dos meus Scones. Quando era pequenina havia um livro de receitas lá em casa de que nem me lembro o nome e que tinha esta receita. Comecei a fazê-la para as visitas em casa dos meus Pais, acho que seguindo um pouco a minha veia british!
Assim sendo, aqui vai a receita!

Scones
225g de Farinha
60 g de Manteiga
1 colher de chá de fermento
30 g de açúcar
7 a 8 colheres de sopa de leite
1 gema de ovo para pincelar

Pré-aquecer o forno a 180ºC. Começar por misturar a farinha com o fermento e de seguida a manteiga partida em pequenos pedaços. Amassar muito bem. Adicionar o açúcar e amassar novamente. Juntar depois o leite, colher a colher, misturando entre cada adição. A massa deverá ficar fofa e sem pegar aos dedos. Caso seja necessário adicionar mais farinha ou mais leite.
Amassar tudo muito bem e depois estender a massa, com a ajuda de um rolo, numa mesa peneirada com farinha até ficar com cerca de 3 cm de altura. Com um cortador redondo ou de outra forma, cortar a massa e colocar os scones num tabuleiro de forno forrado com papel vegetal. Pincelar com a gema de ovo ligeiramente batida e levar ao forno durante cerca de 12 minutos. Servir acompanhados de doce e manteiga.
P.S. Se não ficar bem a culpa não é minha! É essencial usar boa manteiga, faz toda a diferença!

A while back I promised a friend that I would give her my Scones recipe. When I was younger we had a children's cooking book that I don't recall the name that had this recipe. I started baking scones whenever my parents had visits, pursuing the English vein in me I believe!
So, with no more delays, here it goes!

Scones
225g all purpose flour
60 g butter
1 tea spoon of dry yeast
30 g sugar
7 or 8 table spoons milk
1 egg yolk

Pre-heat the oven to 180ºC. Mix the flour and the yeast and then add the butter, cut into small pieces. Knead well. Add the sugar and knead again.  Then add the milk, spoon by spoon. The dough must be fluffy but without sticking to your hands. If necessary add more sugar or more flour.
Knead the dough very well in your kitchen counter and then with your rolling pin roll it in the counter, previously dusted with flour until it is 3 cm high. With a round cutter, cut the dough and put it in an oven tray, covered with a baking sheet. Spread the egg yolk on top of the scones and bake them in the oven for 12 minutes more less. Serve them with jam and butter!
P.S If it doesn't stay right it is not my fault! Use good quality butter, it makes all the difference!
